Delicious surf and turf skewers from the grill

Surf and turf combines the best of both worlds! It's not just a dish, but a philosophy of life. The term originated in the USA in the 1960s. Back then, the most popular dishes in steakhouses along the North American Atlantic coast were steak and lobster—so why not combine the two? Imagine eating a juicy steak, straight from the pasture, alongside crisp seafood fresh from the ocean. It's like a road trip for your taste buds—from the ranch to the California coast, all in one dish!

This is what you need for 12 surf and turf skewers:

  • 250 g good, slightly marbled steak, e.g., Black Angus rump steak (3 cm thick pieces)
  • 12 king prawns, raw and peeled, but still with tail end
  • Chorizo
  • 2 sprigs of rosemary
  • 2 sprigs of thyme
  • Juice of half a lemon
  • pepper and salt
  • 1 garlic clove, chopped
  • 2 tbsp rapeseed oil (corn germ or sunflower oil)
  • 12 cherry tomatoes

Here's how:

  1. Preparation : Cut the meat into even cubes. Wash the shrimp and place both in two separate bowls.
  2. Marinade : Combine half of the chopped herbs, half of the lemon juice (a little less for the steak, a little more for the shrimp), pepper, and salt. Marinate the steak cubes and shrimp with this. Add the chopped garlic to the shrimp. Marinate both bowls in the refrigerator for about 2 hours.
  3. Skewering : Lightly pat the steak cubes and shrimp dry. Then thread one cube of meat, one shrimp, one slice of chorizo, and one cherry tomato onto our SKOTTI grill skewers . Alternatively, you can use wooden skewers. Soak them in water beforehand so they don't turn black on the grill.
  4. Grilling : Grill the skewers over high to low heat until the prawns have taken on a light reddish color, the steak cubes are medium rare and the chorizo ​​is lightly browned.
